I gauge Mexican restaurants by their salsa. This one would win me back every time. If their food wasn’t good otherwise, I’d assume that they had an off day and give them another chance. This stuff is fantastic!
Guaranteed-or-your-money-back-to-win-you-compliments SALSA
3 10oz cans of chopped tomatoes with green chilis, drained
1 bunch of green onions chopped. (about six) OR finely chop a small yellow onion
1 T of FRESH cilantro finely chopped
1 T of minced garlic or a generous teaspoon of garlic powder
1/2 t black pepper
1 t salt
1 t chili powder
hot pepper sauce to taste (about a teaspoon of Louisiana hot sauce or tabasco sauce is about right for a nice heat without scorching your mouth.)
If you let this stand for a couple of hours before serving, it gets even better, but I usually serve it right away and hope there’s enough left over to enjoy later. So far, that only happens when I double the recipe.
